Hubs and I are working on trying to eat more greens and I decided to take the leap and buy kale at the grocery store this week. I honestly think the only time I have ever eaten kale was when I was a kid at a friend's house and it had been steamed to death...soggy ick.

Which was gross enough, but it tasted like this:

Which was even worse! Still, I've decided to give kale another chance since maybe it was just prepared by a novice cook. This afternoon I decided to be brave and try a recipe I found in this month's Real Simple magazine for a Kale-Apple Smoothie.
Ingredients
- 1 cup chopped kale (ribs and thick stems removed)
- 1/2 banana
- 1 chopped small stalk of celery
- 1/2 cup apple juice (no sugar added)
- 1/2 cup ice
- 1 tbsp. fresh lemon juice
Instructions.
Ok, this isn't really complicated, just one little tip as you whiz all of this stuff up in a blender...whir up the kale, lemon and apple juice first to make sure that you completely blend up the kale. Otherwise you might find a tough hunk of kale getting stuck in your teeth halfway through the smoothie!
This smoothie had a really mild, fresh taste and was really easy to drink. Plus I got all the nutritional benefits of kale without having to chew it! The smoothie is only 139 calories and has 3 grams of fiber and protein in it. I used it as a post-workout snack and absolutely will be making another one tomorrow.
