Chew on This

One of my favorite TV shows is "The Chew" on ABC. I'm not usually a fan of daytime TV, but I love the the "hosts" they've assembled for this show...Michael Symon, Mario Batali, Carla Hall, Clinton Kelly and Daphne Oz. The tone of the show is fun and there are so many recipes I want to try.

The other day I finally tried my first recipe from The Chew and it turned out really well. I tweaked a few things (of course, I couldn't leave it alone!) and ended up with a really flavorful and fairly healthy dinner. I think the original recipe was from Daphne Oz - check it out and let me know what you think!

Crockpot Chicken & Sweet Potatoes

Ingredients
4 skinless Chicken Thighs
1 teaspoon Salt
1 teaspoon Curry Powder
1 teaspoon Paprika
1 teaspoon Cayenne Pepper
2 Sweet Potatoes (cut into 1-inch cubes)
1/2 Onion (diced)
1 tablespoon Ginger (freshly grated)
1/2 Cup Peach Preserves
2 tablespoons Apple Cider Vinegar
1 tablespoon Low Sodium Soy Sauce
2 cups Chicken Broth

Instructions

1.
Season chicken liberally with salt and pepper. Put the cubed sweet potatoes and onions into slow cooker and top with seasoned chicken. Whisk together the soy sauce, vinegar, chicken broth and peach preserves before pouring over chicken.















2. Sprinkle the chicken with salt, ginger, curry powder, paprika and cayenne. Cook on low for 3-4 hours until the chicken is cooked through and the potatoes are tender.





























I decided to saute some baby spinach as a side and it was a perfect match with this recipe. I don't usually like cooked spinach because it tends to get soggy and match the taste and texture of a wet gym sock. However, I have found that baby spinach satueed until barely wilted with a splash of olive oil, red wine vinegar, salt, pepper and a clove of crushed garlic is delicious!
