Polenta Love

My husband and I were introduced to the wonders of polenta on our honeymoon.  We went to Disney World for a week and I swear, most of the photos in our honeymoon album are of the gourmet food we enjoyed there!  One of my husband's favorite meals was lamb seated on a creamy dollop of polenta and we were immediately hooked.

I've made polenta dishes a few times since at home, but none were as good as this one!  It was extra special because I got to christen my new cast iron skillet with it.
