I have a confession. I am addicted to bread. It is insane, really, how much I absolutely adore bread. I tried a low-carb diet once and was an absolute crank for 3 weeks until my college roommate convinced me to, "Eat some toast for God's sake!"
During my workout this morning all I could think about was the new bread recipe I planned to try tonight. I did 10 extra minutes on the stationary bike with the recipe in mind...sweet potato biscuits! I've never made anything other than drop biscuits before, so it was new territory. I found the original recipe in the latest issue of Food Network magazine and only altered it slightly. I completely forgot to buy enough butter, so I had to substitute 3 of the 6 tbsp. with vegetable shortening and I used skim milk instead of whole because that's what we had in the fridge. Necessity is the mother of invention and all that...
They turned out beautifully and next time I'll probably try them with all butter instead of having to use shortening. The biscuits complemented the crockpot beef stew I made, check out that recipe here.
