Fish and Fowl

Salmon is one of my favorite types of fish to cook at home, not to mention it is incredibly good for you.  Still, pan-seared fish can get a little old when you eat it once a week, so I'm always on the lookout for ways to be a little more creative with fish dishes.

This recipe is another Jamie Oliver original (I swear I don't always just cook his food!) that I couldn't help but share.  It literally took me 15 minutes to put together and another 15-20 minutes in the oven and virtually no cleanup because the fish bakes in foil packets!  My husband also suggested that next time we try it we should substitute asparagus for the green beans (he's so smart), and I heartily agree.

I served up the salmon with a side of couscous and it made for a delicious weeknight dinner, I feel like I barely cooked at all!

Since this recipe is so simple I thought I could get away with squeezing in a second recipe to share with you.  This is another perfect weeknight dinner that comes together in virtually no time at all and has a delicious Asian taste to it.

It really builds on a simple concept of chicken and veggies served over rice, but the spice and the glaze make a huge difference in what could be a run-of-the-mill chicken recipe.

This dish is shockingly not a Jamie Oliver recipe, it is one I customized myself from one of the other cookbooks lurking in my cupboard.
