New Spin on a Fish Dinner

Stir fry is a staple in our house most weeks, but usually I stick to the generalize chicken-based one with frozen veggies and a bottled sauce over rice.  This week I decided to mix it up a little and experiment with a curry-based salmon stir fry.

I've been working on getting more fish into our diet on a weekly basis, usually succeeding, but sometimes I just get bored with fish preparations.  I had never thought of using salmon in a stir fry before, so thanks Jamie Oliver, your cookbook is a lifesaver.

This recipe was fantastic, next time I might add some more variety in the veggie department, since it really just relied on peas and bean sprouts.  Any suggestions?

I really love the addition of the crushed peanuts and lime, it reminded me of pad thai without the hassle of making it myself or having to order out.

  1. water chestnuts would give it a nice crunch, baby corn is generally good, and i always love zucchini in everything :)

  2. Oooo good ideas, I was thinking maybe asparagus thrown in quick at the end since it cooks so fast - want to keep it crisp too, but asparagus is so good with salmon in general
