In the summer I tend to go on salad kicks. It's a knee-jerk reaction to having beautiful seasonal produce finally available after a long winter of squash and potatoes, plus it usually keeps me from having to turn on my oven for long periods of time in 90+ degree weather!
However, this summer I've been eating salads every day for lunch (in some form or another), so I've steered clear of them as dinner entrees.
This salad just became my favorite exception to that rule. It also has made me seriously consider making my own salad dressing on a more routine basis. The dressing/marinade is what really shines in this dish, the flavors are amazing. Complex with a little heat but not too overwhelming, it marries perfectly with the chicken and veggies. Next time I might give shrimp a try rather than chicken, or grilled tofu.
I just might mix up a giant vat of this dressing and dip everything I can find into it!
