So Much More Than A Bean Soup
In my eternal quest for new types of soup to make, I stumbled upon this little gem of a recipe. The original recipe calls it a black bean soup, but I think the title does the dish a grave disservice. This is a full-bodied, flavorful soup in which black beans are only one ingredient.
You could easily add zucchini squash or wilt spinach or kale into this soup and I'm sure it would only add to the flavor. Even my 11-month-old liked the taste of it, gobbling up her own bowl for dinner.
