Summer Veggie Goodness

Stews, soups and chilies are a staple in our kitchen no matter the season, but I am always less excited to make them during the summer months.  Maybe because the last thing I want is to heat up the kitchen when it is 90+ degrees outside or maybe I just crave those fresh veggie flavors rather than the soup-y roast-y ones of the fall and winter.

This recipe hits both notes at once and can be extremely versatile, you could substitute whatever veggies you have fresh from your garden for just about any ingredient.  Next time I'm adding zucchini for sure and maybe fresh corn instead of frozen.  I'm also a big fan of textural differences in dishes, so maybe some toasted tortilla chips instead of just plain tortillas for serving along with avocado slices and a squeeze of lime!
