The Roundup That Wasn't
This week's recipe roundup isn't much of a roundup, I honestly only tried one new recipe and relied on a few old favorites for the rest of our meals. We also had family in town so we ate at home less! Still, wanted to share the new one with you and one of the old favorites because it is SO delicious and simple.

Vietnamese Lime Pepper Stir Fry
This is one of the recipes that is responsible for our major switch from any bottled "stir fry" sauce to making sauces from scratch. I honestly have no idea why I didn't switch years ago, the flavor is so much better, I know exactly what is going in each sauce and usually have at least 80% of the ingredients handy in my pantry. Plus you miss out on the kind of overly-sweet gloppiness that seems to be a feature of all bottled stir-fry sauces.
The second recipe, which is really the only new one I tried this week, surprised me by how insanely flavorful it was. I love butternut squash but had never considered pairing it with leeks in a dish like this. It took a little prep, like searing the chicken beforehand and prepping the squash, but it wasn't too extensive and totally worth it in the end. I served it up over brown rice and will definitely be making it again this fall.
