Bowled Over

This week's recipes were all served up in bowls, so of course I couldn't resist a punny title.  I cooked a few other standby dishes this week too, like my Indian Chicken Rice Bowls and Super Quick Salmon Stir Fry.  It was an overwhelmingly bowl-centric week for sure...and a delicious one at that!  What are some of your favorite meals served in a bowl?


The first recipe I want to share with you came from a good friend of mine out in the midwest (I live on the east coast now).  We rarely get to see each other in person due to the distance, which is heartbreaking, but thankfully with technology we can still skype, swap recipes and chat regularly.  She shared this fabulous recipe for her favorite chili and I had to give it a try.  It was a hit in our house and I'm sure it will land on our weekly menu again!


This second recipe is from another midwest-based friend of mine who sent me a new cookbook I've been dying to get my hands on!  We've talked so much about recipes from this book, she's even photocopied pages and sent them my way at times.  So, when she surprised me with a copy, I had to try a recipe right away!  This pasta is addictive and was popular with all of us, including my 16-month-old, who couldn't get enough.


The final recipe of the week started out as kind of a riff on Chipotle's burrito bowls.  I love those things but eating out can get expensive, plus you can shave off a lot of calories if you mimic a few restaurant dishes at home.  These were delicious and really easy to throw together, a real weeknight lifesaver of a meal!  I stuck with veggies, but you can always add your favorite meat to these as well.
