The Easiest Crockpot Chicken
This recipe is so simple I actually feel a little silly calling it a recipe! However, it is super-versatile and perfect for days when you just don't have time to do a lot of prep or are out of inspiration.
I most recently made this chicken dish using bottled salsa verde and served it up over wild rice with a side of refried beans and topped it with some shredded montery jack cheese. You can also make salsas or sauces from scratch and serve it up the same way or use a bottled BBQ sauce, stir-fry sauce, etc. The possibilities are endless!
Just think of any meal you'd use chicken in and that will work too. This chicken is great stuffed in tacos, burritos, on a salad, etc. It is also easily doubled, just make sure to occasionally stir it while it cooks to move the chicken around and ensure even cooking.
Simplest Weeknight Chicken Dinner
Ingredients
4 Boneless/Skinless Chicken Breasts (could also use thighs, just go boneless)
1 Bottle Salsa Verde (10-12 oz), or use your favorite bottled sauce
Salt & Pepper
Nonstick Cooking Spray
Instructions
Spray the inside of your crockpot thoroughly with the nonstick spray. Season the chicken well on both sides with salt & pepper before placing in the crockpot. If your chicken is really thick and isn't fitting well in the crockpot, make cutlets to create thinner pieces that will cook evenly.
Pour the sauce over the chicken, gently shifting the meat around with tongs to make sure it is all coated. Cover and cook on low for 4-6 hours or high for 2-4. Remember every crockpot is different so keep an eye on yours so you don't over or under cook the chicken!
When its ready, remove from crockpot and serve over rice, pasta, potatoes, a salad or in burritos, tacos, etc. The possibilities are endless!
